Roasted Cabbage
I couldn't wait to share this new recipe with you! I love it, Brett loves it, Nix loves it. Fresh vegetables are so important to feed to your family. I was at the store with Nix and Tino a couple weeks ago and I always let Nix pick out vegetables in the produce section of the store and he picked out a purple cabbage. What am I going to do with a purple cabbage? So we ate some of it raw and it really doesn't agree with me raw, especially while nursing. So I decided to roast it with olive oil and salt. I sliced it in strings and tossed it with oil and salt on a cookie sheet. I put the oven at 400 degrees F and cooked it for about 30 minutes... maybe longer. When the cabbage started to brown a little I sprinkled some sweetened shredded coconut on top and turned the oven on to broil and broiled for about 10 minutes. This can be made with green cabbage and doesn't necessarily need the coconut. Try it out cuz you won't be disappointed!
